Gently dimple each piece with your fingers, then braid the sides toward the center and fold into a tight roll. 6. Third Proof Place each shaped loaf into a well-oiled loaf pan. Ingredients for a Small Batch: 500 g flour + extra for dough development 325 ml room temperature water or lukewarm water 1 teaspoon sugar 7g instant yeast (1 packet) or 10.5 g active dry yeast 2 tablespoons oil 15 g Himalayan Salt Ingredients for a Large Batch: 1000 g flour + extra for dough development 650 ml room temperature water or lukewarm water 25 g sugar 14 g instant yeast (2 packets) or 21 g active dry yeast 4 tablespoons oil 30 g Himalayan Salt Execution Steps: Activate the yeast: Mix the yeast with lukewarm milk and sugar. Cover and let it sit for 15–20 minutes until frothy. Stir to dissolve any remaining yeast granules. Make the dough: Add the yeast mixture to the flour, salt and the olive oil. Knead until the dough is smooth and elastic. Knead until a slightly sticky dough is achieved. First rise: Place the dough in a lightly oiled bowl, cover, and let it rise for ~ 1 hours or until doubled in size. Allow the dough to rise in a warm environment until it doubles in size. Second rise: After the first rise, punch down the dough, knead briefly, and let the dough proof for another hour. Shape the buns: Transfer the dough to a very lightly floured work surface and divide it into 10-20 portions (depending on which batch you are doing). I like to weigh out each piece so that they are all the same weight. Roll each piece into a tight ball and then shape each ball into a circular disk by lightly pushing the ball down with your palm. Shape disks with a diameter of 10 cm or approximately 4 inches (10 cm). Final proof: Let rolls rest covered for another 20 minutes. Bake : Preheat the oven to 220°C (425°F) and bake for 15 to 20 minutes.

This French bread recipe is particularly special because I discovered the backbone for it in an old Louisiana Cajun cookbook titled Talk About Good! My copy is from the 4th printing in 1969, and I am forever grateful to my mother-in-law for gifting me a couple of these treasured books. When I first tried the recipe, it didn’t turn out well—by then I already knew the book contained some measurement quirks. After many trials and errors to fine-tune the ratios and techniques, I finally succeeded. Here is my perfected version of Pain Ordinaire French Bread , a traditionally prepared baguette recipe that yields four loaves of crusty, crackling bread. Freshly baked French baguettes resting on a cooling rack, surrounded by rustic decor elements, create a cozy and inviting culinary scene. Ingredients 850 g bread flour 525 ml of lukewarm water 7 g of instant yeast / 10.5 g active dry yeast 1 tbsp sugar 3 tbsp soft shortening or soft butter or extra-virgin olive oil for richer flavor 1 tbsp salt 1 eggs white + 2 tbsp water for brushing loaves before baking Corn meal (you will sprinkle a greased cooking pan lightly before placing the loaves in here) Execution Steps 1. Shape the Dough : After the third rise, transfer the dough to a floured surface. Divide it into two longitudinal pieces, ensuring that each piece is well coated in flour. Final Rise : Allow it to rest in the baking pan for approximately 10-15 minutes for one last rise. Baking : Bake for 10 minutes at 220°C (420°F). Then continue baking for another 12-14 minutes at 200°C (375°F). Tips for Success Water Your Hands : It's helpful to wet your hands frequently when working with the dough. The word pastrma has Turkish origins ( pastırma ), meaning cured meat — a reflection of Macedonia’s history during the Ottoman era. The “j” in pastrmajlija was later added by Macedonians, giving it the spelling and sound we use today. Traditionally, Pastrmajlija was made with cured lamb or mutton, but as times changed, pork became the star ingredient . While it’s enjoyed throughout Macedonia, the city of Štip proudly claims Pastrmajlija as its own, celebrating it every year with the Pastrmalijada Festival . Other towns like Veles have also embraced their own versions, each one a little different, but all equally comforting. Stefi’s Homemade Macedonian Pastrmajlija Recipe This is my take on Pastrmajlija , made the way I learned at home — simple, flavorful, and baked to golden perfection. It makes two generous portions — perfect for sharing with family or enjoying warm out of the oven. Pastrmajlija is baked as a rustic oval or rectangular flatbread, sometimes topped with eggs, mushrooms, or hot peppers , and always served with a shot of rakija and a side of pickled peppers for the true Macedonian experience. Ingredients (Makes 2 Pastrmajlii) For the Dough: 416g bread flour 250ml liquid (120ml warm water, 120ml warm milk) 5g instant yeast 10g sugar 6g Himalayan salt 60ml extra virgin olive oil For the Topping: Pork, cut into thin small peices (0.5kg or 1lbs) Mozzarella cheese Mustard for tenderdizing the meat Seasoning for the meat (I use Vegeta , Tony Chachere’s , smoked paprika, black pepper, and a pinch of cayenne) Drizzle of olive oil (try my favorite Mediterranean cold-pressed EVOO) How to Make Pastrmajlija Step 1: Activate the Yeast In a bowl, combine the yeast, warm milk, and sugar . Cover and let it sit for about 15–20 minutes , until the mixture becomes bubbly and active. Once ready, stir to dissolve any undissolved yeast. Step 2: Make the Dough Add the flour, olive oil and salt to a large bowl. Pour in the yeast mixture and mix until fully incorporated. Knead until the dough feels tight and slightly sticky — that’s when you know it’s ready for the first proof. Place it in a lightly oiled bowl , cover, and let it rest for 1 to 1.5 hours in a warm area. Step 3: Prepare the Meat While the dough rests, season your sliced pork with mustard and spices. Let it marinate and tenderize while the dough rises. You can also prepare and shred your cheese at this point. Step 4: Shape and Second Proof Once the dough has doubled, punch it down and transfer to a floured surface. Divide it into two equal pieces , shape each into a ball, and let them rest for another 20–30 minutes for the second proof. Step 5: Roll and Shape Roll each piece into an oval or rectangular shape , about ½ cm thick (5mm) . To create the traditional braided edge , place your index finger along the edge of the dough. Step 6: Assemble Spread a thin layer of cheese on the bottom, add your seasoned pork , and top with more mozzarella . Brush the edges with olive oil for that signature golden shine. Step 7: Bake Bake in a preheated oven at 240°C / 470°F for 15 minutes , or until the crust is beautifully golden and the meat is cooked through. A golden, airy, and legendary breakfast from the heart of the Balkans. A Bite of Heritage There are few smells that bring me back home like freshly fried Mekici (singular: Mekica or Pitulica ). These soft, golden pillows of dough are a Balkan classic —loved in Macedonia, Serbia, and Bulgaria alike. In Serbia, they’re known as Mekike , while in Bulgaria, they go by Mekitsa . My family has passed down several variations of this recipe, and today, I’m sharing the version that doesn’t include Rakija or traditional Macedonian yogurt—simple, accessible, and incredibly delicious. This recipe is more than special—it’s the taste of Sunday mornings, laughter in the kitchen, and generations gathered around a plate of warm, fluffy dough. Ingredients: 513 g all-purpose flour 200 ml water + 200 ml milk 7 g instant yeast (or 10.5 g active dry yeast / 21 g fresh yeast) 10 g sugar 10 g Himalayan salt Execution Steps: 1. Activate the Yeast In a small bowl, combine the yeast, lukewarm water & milk, and sugar. Cover and let it rise for about 10 minutes, until frothy. 2. Mix and Knead In a large bowl, combine the activated yeast with the flour and salt. Mix and knead until a smooth, elastic dough forms. 3. First Proof Place the dough in a lightly oiled bowl. Cover and let it rise for about 20 minutes . 4. Second Proof Punch down the dough and reshape it. Let it rest and proof again for another 30 minutes . 5. Shape the Rounds Transfer the dough to a lightly oiled surface and divide it into 10–15 pieces , depending on how big you want them. (I like to make a mix of sizes—some big, some small. Watch my Instagram reel below for a visual guide!) 6. Flatten and Prepare With slightly oiled hands, flatten each piece into a round disk—not too thin, not too thick. Repeat this process twice to create the signature soft interior and crisp exterior. 7. Fry the Mekici Heat oil in a deep pan. - Quick Pizza Dough Recipe: Ready in Just Two Hours
Quick Pizza Dough Recipe Ingredients for a small pizza: 250 g bread flour 150 ml warm water 4 g instant yeast / 6 g active dry / 12 g fresh baker's yeast 1 tsp sugar (10 g) Sprinkle some Himalayan salt (0.5 tsp) Drizzle some Olive Oil* (try my favorite Mediterranean cold-pressed extra virgin olive oil) Ingredients for a medium pizza: 300 g bread flour 180 ml warm water 4 g instant yeast / 6 g active dry / 12 g fresh baker's yeast 10 g sugar 1 tsp (7 g) Himalayan salt Drizzle some Olive Oil* (try my favorite Mediterranean cold-pressed extra virgin olive oil) Ingredients for one large or two small pizzas: 500 g bread flour 300 ml warm water 7 g instant yeast / 10.5 g active dry / 21 g fresh baker's yeast 2 tsp sugar 2 tsp Himalayan salt 30-40 ml Drizzle some Olive Oil* (try my favorite Mediterranean cold-pressed extra virgin olive oil) Execution Steps: Activate the yeast by combining the yeast, water, and sugar. Cover and let the yeast mixture sit for 15-20 minutes. After the yeast rises, stir the remainder of the undissolved yeast. Add the salt and olive oil to the flour. Combine the yeast mixture with all the flour in your bowl. Mix and knead until fully incorporated. Aim for a medium-hydrated dough that feels soft to the touch and is just barely sticky. Let the dough rest for 1 hour in a warm area. Once the dough has risen for the first time, knead or reshape it into a ball and allow it to rest for another 20-30 minutes. Transfer the dough to a floured surface - If preparing one pizza , spread the dough using a rolling pin in whatever form you want. This is the most creative step in my POV If preparing two pizzas , divide the dough into two equal sections and knead each portion into a ball. Allow them to rest for at least 10-15 minutes before rolling them out with a rolling pin. Bake for 15 minutes at 250°C or 480°F. Pre-bake tip (not a must) : sprinkle some semolina flour on the baking sheet and oil your pizza edges if they are apparent. Toppings: Get creative! My specialty pork/beef ground mix with mozzarella & swiss, parsley, oregano, basil. Another favorite one is: ham & turkey, mozzarella, parmesan, mushrooms. Another favorite one is pepperoni, jalapenos, and bacon. Oregano is always a must, so are several types of cheese 😊 For the sauce: Get creative! Let me know in the comments ⬇️ what kind of bread dough you would like to learn to bake that I haven’t shared yet. 😊 Ingredients: 700 g bread flour 550 ml lukewarm water 9-12 g of instant yeast / 13-18 g of active dry yeast 1 tablespoon sugar 1 tablespoon Himalayan salt Drizzle some olive oil (optional) Execution Steps: Activate the yeast by combining the yeast, water and sugar. Cover and let yeast concoction rise for 10 min. Stir the remainder of the dissolved yeast. Combine the yeast mixture with the remaining ingredients: flour, salt and oil (optional). Stir with some kind of wooden spoon or dough whisker or your hands, until everything is combined. Mix and knead until everything is well combined, cohesive sticky but stiff dough. Interesting dough fact: This dough has 78% hydration, meaning it has a high level of hydration. To find the percentage of an ingredient, like hydration, divide the quantity of the ingredient by the amount of flour and multiply by 100% to get the percentage. Super easy math! Cover your dough and let it proof for 1 hour or until it doubles in size. After the 1st rise, uncover the dough, punch, and reshape the dough. Let it rest for another hour. If you need to slow down the resting process place the dough in the fridge for up to 1-2 hours. Preheat your oven, then warm up the empty pot in the oven for 10 minutes and then pour the dough inside the pot, sprinkling some flour on top of it. Use a dutch oven with a diameter of 25cm/10in. Bake covered at 200°C (400°F) for 30 minutes. Take the pot out of the oven, remove the cover, and place it back to bake for another 15 minutes. Let it cool off for 20 minutes before you cut it.
