Baba Elka’s Classic Doughnuts 🍩

This legendary doughnut recipe is more than just flour and sugar—it’s a bite of my childhood, a tribute to my grandparents, and a celebration of cozy mornings spent in my grandmother’s kitchen. 🧡

After deciphering an old family recipe (basically encrypted with love and memory 😂), I created a small batch of mini classic doughnuts—soft, golden, and dusted with powdered sugar magic.

Baba Elka’s Classic Doughnuts 🍩

This legendary doughnut recipe is more than just flour and sugar—it’s a bite of my childhood, a tribute to my grandparents, and a celebration of cozy mornings spent in my grandmother’s kitchen. 🧡

Hi friends — it’s been a little while. I’ve been taking time to grieve the loss of my sweet cat Jojo 🕊️💔. He brought so much comfort to my world, and I needed space to honor him.

This reel is me easing back into what I love — creating, experimenting, and keeping traditions alive. Here’s a peek at a new laminated dough recipe I’m working on (almost there!).

Your weekend brunch just got better 🍳✨

On The Menu Today: a golden, fluffy *Frittata* — the ultimate egg casserole. Easy, versatile, and oh-so-satisfying.

I love loading mine with:
🧅 Onion, 🧄 Garlic, 🍄 Mushrooms, 🌿 Spinach, 🌰 Artichokes
* Parmesan 🧀 & a creamy touch of kefir, sour cream, or crème fraîche

🔑Tip1: Don’t forget to drain your asparagus
🔑Tip2: To elevate the frittata a step further top with homemade salsa and guacamole 🍅🥑
🗝️Tip3: After you pour the egg mixture into the skillet, cook about 5min on top of the stove before baking in the oven 👩‍🍳

🥚 7-8 eggs
🔥 Bake in a 10–12” oven-safe skillet at 400°F (205°C) for \~12 min
⏲️ Rest for 5–10 min before slicing

⚡️The first crowned bread of the season is a sweet twist on a favorite from my archives—a small batch of focaccia that satisfies your sweet tooth without overwhelming your kitchen 🍭

Infused with a simple homemade jam: ripe berries, a touch of sugar, and time. Let it simmer until it liquifies, then cool before folding it into the dough. The result is a focaccia that’s golden at the edges, pillowy within, and subtly laced with fruit.

✨For the icing: Dissolve 1 cup of powdered sugar to 4 tablespoons of of heavy cream

My First Cake Ever! 🍋 Pistachio + Olive Oil Magic 🫒💫 | S2, Ep2🦄

This is where it all begins — She’s zesty, she’s nutty, and she’s officially my cake era debut — say hello to this one layer Lemon Pistachio EVOO beauty ✨💚💌

This one’s got tang, crunch, and a whole lotta heart (plus a generous pour of my fave olive oil 💅)

For the cake batter:
Zest from 3 lemons ~4g
95 ml freshly squeezed lemon juice (2-3 large lemons)
220 g sugar or sub honey*
150 ml Extra virgin Olive Oil (EVOO)
115 ml or ½ cup milk of your choice
180 g all purpose flour (to make it GF sub GF flour 1:1 ratio)
3 eggs
140g finely ground pistachios (based on your preference & add extra for dusting the top)
1 tsp vanilla
1 tsp baking powder
¼ tsp baking soda
½ tsp Himalayan salt

For the frosting:
8oz mascarpone cheese
½ cup powdered sugar (~60 g)
Pinch of himalayan salt
1 ½ cup heavy whipping cream
A splash of vanilla powder
1 scoop of plain greek yogurt (~2-3 tablespoons)

Bake at 180°C (350°F) for ~35-45min or until golden brown. Use an 8-10-inch springform pan or 8x8-inch square baking pan. Use a toothpick to check if the cake is baked. Wait for cake to cool off before frosting it. Keep the cake refrigerated.

*if u’re subbing honey:
•3/4 cup of honey = 1 cup of sugar
•Decrease the amount of liquid in the recipe by 1/4 cup
•counter acidity by using 1/2 teaspoon for every cup of honey
•honey bakes quicker so i would monitor baking and reduce the temp to 160°C (325°F)

On the menu today: Russian Salad (Olivier Salad in Balkan Style) Recipe ft Kiflichki 🥕🫛🥔🥙

Get ready for a flavor explosion! 🙆🏼‍♀️💫This beloved salad is a staple at Balkan gatherings, with each family adding their own twist. Perfect for holidays, celebrations, or everyday meals! 🥗
This salad goes well with so many various meals, from a simple sandwich to using it as a side with grilled meats. My favorite way to eat it is with kiflichki, which are croissant bread rolls in balkan style. You can find this recipe on my baking blog page. 🥐

Ingredients:

300g diced ham
300g diced cheese
5 medium boiled carrots
2 boiled potatoes (optional)
2 boiled eggs
300g boiled green peas
6 diced pickles

For the dressing:
¼ cup or big spoon of mustard,
~ 200g or couple spoons of sour cream
~ 400g mayonnaise.
Mix everything until well combined and chill the mixture in the refrigerator for a minimum of 2HR, but best if done overnight. Serve cold ❄️
